Farmer's Market 5-day 15-meal Feast
Servings: 15 meals
Ingredients:
- 1 chicken
- kosher salt
- olive oil
- herbs
- garlic
- lemon zest
- salt and pepper
- lemon juice
- red potatoes
- red onions
- flour
- chicken stock
- summer squash
- carrots
- corn
- peas
- thyme
- butter
- ice water
- apples

Had a hankerin' for chicken, so this is a Farmers Market multi-day feast… Roast Chicken and Red Potatoes followed by Chicken Pot Pie and a bonus Apple Pie.
BLT Chevre Spread
Ingredients:
- 4 ounce round of Cypress Grove Natural Chevre
- 4 slices of bacon
- 3 Roma tomatoes
- 4 to 5 sprigs Italian Parsley
Instructions:
Get a 4 ounce round of Cypress Grove Natural Chevre (plain) and let it warm to room temperature. Fry up 4 slices of bacon crispy and dry off with paper towels, then finely chop. Completely de-seed, then finely chop 3 Roma tomatoes. You want to get all the juice out of the tomatoes so that the spread doesn’t turn Pepto Bismol pink. Mince 4-5 sprigs of Italian parsley. Mix together.

I visited the lovely headquarters of Cypress Grove Chevre in Arcata, CA this week and met the people behind Emmi, the new parent company for our Humboldt Made gem. Very nice. They plan to help Cypress Grove grow right here at home, and help the goat dairy producers double their production of milk. The quality of milk produced in Humboldt is better for making Cypress Grove cheese than any other milk, but we don’t produce enough. We can. They have the now-how and the capital. This will make goat dairies profitable and sustainable here in Humboldt.
